Nothing better than getting out of town for the weekend, it always makes your weekends feel substantial. I had my eye on this hotel for a while, not by choice – it had literally taken over Instagram. It’s not surprising why when you arrive at Halcyon House, the decor is ON POINT. Even the darn tiles on my room’s verandah were photo worthy. The funny thing is, this place was originally a surf motel. You can still tell by the exterior but it has been shaken and served with some serious style. This gem is situated on Cabarita beach, a sleepy beach town in Northern New South Wales – 20 minute drive from Coolangatta Airport and around a 30 minute drive to Byron Bay. Your days here involve free Yoga in the morning, sunset swims in Cabarita beach, Bike rides up to Kings Cliff beach, Drives to Byron Bay (hire Audi’s at the hotel) and a substantial time lounging around the pool ordering the Cabarita Spritz and delicious nibbles. One must is having dinner at their famous Paper Daisy restaurant. Fronting the kitchen is 2014’s Queensland Chef of the Year, Ben Devlin. Dinner is a true fine dining experience with the choice of 3 / 4 course feast with delicious, unique and memorable dishes with a particular emphasis on seafood. If you can’t get in for dinner, not to worry, breakfast and lunch is just as good ;). A TRULY STUNNING EXPERIENCE IS AN UNDERSTATEMENT!
